One of our favorite all time meals in our household is the taco. We’ll take it in almost any form; turkey tacos (our go to), beef tacos, on nachos and my all time favorite; the lemon pepper chicken taco made by none other than Mr. Man of the house himself.
It’s so delicious in a fried corn tortilla smothered in homemade guacamole and topped with red cabbage. Mmm Mmm good!. My mouth literally just started watering while writing this sentence. Excuse me while I wipe up the drool.
Maybe I can share that recipe with you if I can get him to give away his secrets. 😉
Now that I’ve made you hungry for tacos, lets talk about chips. Ha! When we are feeling ambitious or are just looking for something fun to do together as a family in the kitchen we like to make our own tortilla chips…usually to go with our tacos.
It’s super simple and fun. Our kids love getting in the kitchen to help with this process. So we make an assembly line. One person brushes both sides of the corn tortilla with olive oil, the next person gets to use the pizza cutter to quarter the tortillas and the last person gets to lay them on the pan and sprinkle them with salt. Fast. Simple. Fun. Family Time.
We pop them in the oven at 400 degrees for about 10-12 minutes. My husband likes them a little on the chewy side, but the rest of us prefer them to be nice and crunchy. Sometimes he loses out to all the girls but other times we do a few pans of each to make everyone happy!
Everyone is so eager to eat them after they come out of the oven, more often than not at least one person gets burned. I’m not sure if I should admit this or not, but when we do make them it usually ends up becoming a meal instead of a side or snack.
They are that good! We bust out the salsa and the guacamole and have a family movie night and eat chips…and more chips….and more chips!
We love to make nachos with them too! Mr. Man is also the best nacho maker in town. He’s full of surprises, he is!
If you want to put a spin on things you could always add a little flavor to your chips. You could sprinkle them with cayenne or chili powder and lime for a kick, garlic salt or for dessert; sprinkle them with a little cinnamon and sugar and make some fruit salsa to go with it!
However you decide to flavor them, you will love them!
